Filo Chicken and Corn Triangles

Chicken & Corn Filo Triangles
If you'r thinking, "What should I make for dinner" then this is a must to try. A delicious meal and healthy, yes both of them :O If you don't think that is possible then you need to try this. It is also fast to make so if you don't have much time then this is perfect. Hope you enjoy.

Preparation time: 20 minutes
Cooking time: 15 minutes
and it serves around 4 people

Ingredients

300g Skinless Boneless Chicken Breast
6-8 sheets filo pastry
410g Cream Style  Corn
2 Tbsp finely chopped parsley
1 tsp melted butter
1/2 cup lite sour cream
1 Tbsp sesame seeds (optional)
2 spring onion, diced (optional, personally I don't like them)

Method

Preheat oven to 200°C and line a tray with baking paper.
Drizzle some of your favorite oil in a frying pan and put in the Chicken.
Cook the chicken until golden brown and remove from the pan.

Pan Fry the spring onions for 2 minutes.Then add the Cream Style Corn, parsley and lite sour cream. Keep stirring until heated through. Season to your liking.

Fold a sheet of filo pastry in half lengthwise. Place a large piece or 2 small pieces of chicken in the right hand corner of the pastry. Spoon in 2 spoons of the corn mix and fold this piece diagonally to make a triangle.
Then fold this triangle over again and fold any extra pastry underneath. Repeat this until all the chicken and corn mix is used up.

Place triangles on the baking tray and brush with melted butter and sprinkle with sesame seeds.
Bake for 15 minutes or until filo is golden. Serve with a salad.


Also if you'r not too big on corn you could try and substitute it for some other vegetable, just experiment or you could try adding other meat as well, maybe some bacon (bacon goes with anything haha I LOVE IT) or whatever you want =D

Macaroni and Cheese


Thinking, "What should I make for dinner?" well look no further. I'm going to share one of my absolute favorites and it is so simple and fast to make. It might sound pretty basic at first but once you start experimenting you can create masterpieces of macaroni. Hope you enjoy.

Ingredients

250g elbow macaroni
200g grated Cheddar cheese
60g grated Parmesan cheese
3 cups milk (750ml)
60g butter
2 tablespoons plain flour
30g butter

Method

Preheat oven to 180C.

Cook the macaroni to the directions on the packet which should be around 10mins and then drain.

While your waiting, in a saucepan, melt butter over a medium heat. Stir in the flour. Add milk to that slowly, stirring the whole time.

Stir in the Cheddar and Parmesan cheeses and cook over low heat until cheese has melted and the sauce is a little thick. If it is to thick add a some extra milk.

Put macaroni in large casserole dish and pour sauce over macaroni. Stir well.
If you want some meat in your dish you could stir in some chopped up bacon, it is amazing!

Melt butter in a frying pan over medium heat. Spread over the macaroni cheese to cover the top. Sprinkle with some herbs to taste, experiment a bit =D.

Put in the oven for 30 minutes. Serve and Enjoy
Serves around 5 or 6 and great for heating up tomorrow for lunch.


Like I said before you can experiment with this to try get tasting amazing. Personally I normally just put some bacon in and that suites me but there is no limit to what you can do.


Just to let you know there is quite a bit of cheese and this is not the healthiest of meals so this is a once in a while food so don't go overboard eating this every day..... but I wont blame you if you do, haha bye.

What should I make for dinner

This is a nightly issue in a lot of homes. There is so much you could do like chicken, beef, pork and so on, but most of that gets boring after a while. Finding the right balance between food that everybody will like and is healthy as well can be tough and thats were I come in.

I have made this blog to give you some dinner ideas to get you through tonight with delicious meal in your tummy =D
